Limonella – Amalfi Coast Trattoria
We have been appointed from Mr Rimgaudas Kunstmonas to develop and implement an amazing concept based on Amalfi Coast food & drink culture.
We have been in charge from the first steps into the project, from designing the kitchen, bar and floor layout to develop the F&B offer, creating financial forecasts and budgets, recruit and train the team and, finally, develop the online presence and digital communication.
More specifically, we have created and delivered:
– Kitchen (2 kitchens), bar, floor layout designing
– Concept Book, brand development
– Preliminary financial base case to establish capex investment, P&L forecasts and ROI
– Full F&B offer across all relevant day parts with target dish pricing and costing
– Crockery, glassware, tableware suggestions and quotations collection
– Kitchen operational model required to execute the food offer
– Kitchen equipment list
– FOH and BOH SOP’s manuals
– FOH and BOH team recruitment and training
– Pre-launch Team building activities
– Trouble shooting over the launching period
– Set up and training of the online booking system
– Set up and planning of the social media communication
– Website development
– Digital Marketing and advertisement
